Student-friendly recipes: Peanut butter cranberry granola bars

Granola bars make a great portable snack. The peanut butter and raw oats make this bar one that will stick with you for a while.  

 

Makes 18 bars

Total cost: About $5.04 total, or $.28 per bar

 

Ingredients:

¾ cup peanut butter ($.79)

½ cup honey ($1.75)

2 cups rolled oats ($..40)

1/3 cup sunflower seeds ($.50)

1/3 cup dried cranberrys ($.75)

½ cup chocolate chunks or chips ($..50)

2 Tablespoons coconut oil($.20)

½ teaspoon vanilla ($.15)

1 pinch sea salt

 

Instructions

Gather and prep ingredients.

Line an 8×10 baking dish with parchment paper.

Melt the peanut butter, honey and coconut oil together in a saucepan over low heat until smooth.

Add in all the remaining ingredients except for the chocolate and stir.

After the mixture has cooled to about room temperature add the chocolate and mix.

Flatten out into the parchment-lined baking dish and press together firmly with a flat bottomed bowl.

Refrigerate overnight (or for at least a couple of hours) and then cut into small bars. Store in an airtight container in the refrigerator.

Notes:

Play around with the ingredients to suit your taste.  Many different seeds, nuts, and dried fruit combinations work well.
